From the Kitchen: Grilled Chicken Parm

Summer days are beginning to fade away... and some may think that means time to put away the grill. Not me!  If you are a griller through the fall months you can use this simple idea to dress up your grilled chicken.  I came up with this idea since Keith always seems to want chicken parmesan for dinner...

Ingredients:

Chicken breasts
Italian dressing 
Marinara pasta sauce
Sliced provolone cheese

Fire up the grill.  Coat (or even better marinate) the chicken in the Italian dressing. Grill the chicken about 7-8 minutes on each side until cooked through (depending on the size of the breast).

Ladle a spoonful of marinara on the chicken and cover with the slice of provolone.  Close the grill for another 2-3 minutes for the cheese to melt.

Remove from grill, serve, and enjoy!



And then for dessert...
Strawberry Shortcake!!

I used the easy recipe on the back of the Bisquick box. 



Kitchen Adventure Tip:  Stir the sliced strawberries (or any type of berry) in a tablespoon of sugar for a little while before assembling the shortcake dish.  Yum!
