From the Kitchen: Saltine Toffee

Oh, I love toffee.  I love caramel.  I suppose I just love the melty-deliciousness of butter and sugar.

Ingredients:
20 Saltine crackers
1/2 cup butter (one stick)
1/2 cup dark brown sugar
3/4 cup semi-sweet chocolate chips
chopped pecans

Preheat oven to 400 degrees. Arrange crackers on parchment paper on a rimmed cookie sheet or baking pan. Melt butter in medium saucepan.  Whisk in brown sugar until blended.  Heat to boil and allow to thicken (2 minutes).  
Pour butter mixture over saltine crackers.  Place in 400 degree oven for 10 minutes or until bubbly. 

Remove from oven and sprinkle with chocolate chips.  Allow them to soften for a minute, then spread with spatula until smooth.  Press pecans into chocolate.  

Freeze for 30 minutes or until firm. 

Break apart and enjoy!  Makes more than 20 pieces.
